Ingredients
  

  • 3 pounds golden potatoes cubed
  • 1 Medium onion diced
  • 2 cloves garlic
  • 10 oz Diced tomatoes with Green Chilies Rotel
  • 1 Tablespoons Olive Oil
  • 1 teaspoons Cajun Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 Pound Smoked sausage Sliced -See notes
  • 1 pound green beans
  • 1 packet onion soup mix
  • 1/2 cup butter

Instructions
 

  • Cut potatoes in fourths and place them on the bottom of a slow cooker
    3 pounds golden potatoes
  • Place diced onions, minced garlic and can of rotel on top of potatoes . Mix together .
    1 Medium onion, 10 oz Diced tomatoes with Green Chilies, 2 cloves garlic
  • Drizzle Olive oil over the Mixture . Sprinkle them with the cajun seasoning , salt and pepper . Toss well .
    1 Tablespoons Olive Oil, 1 teaspoons Cajun Seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • Place the sliced sausage on top of the potatoes .
    1 Pound Smoked sausage
  • Place the fresh green beans on top of the sausage .
    1 pound green beans
  • Sprinkle the top with onion soup mix and and place a stick on top of that .
    1 packet onion soup mix, 1/2 cup butter
  • PLace the lid on top of the crock pot and cook on low for 6 hours, or until the potatoes are tender . Stir about half way through the cooking process .

Notes

If fresh green beans are not available frozen green beans are a great option. If canned greens are the only option I recommend adding them about half way through cooking so they don’t get too soggy. 
I used Cajun Smoked sausage for this but Andouille would well for this.
