This is one of my family’s favourite vintage cakes and I’m thrilled to have this easier version to fall back on. It’s a ‘bake again’ recipe!

I can’t believe this hummingbird cake is so easy to make. I love baking on Sunday, and my kids told me today was their lucky day because of your delicious recipe. Thanks for sharing.
I really want to make this but it’s too much for just two of us. Any ideas of cutting it down to a smaller size?
I have never done it but you could totally cut this in half . For the eggs I would do 1 whole egg and 1 egg yolk, use 2 bananas , You will have to estimate the 4 oz of crushed pineapple . Everything else is is pretty self explanatory . I would bake this in a 8×8 baking pan . You will need to watch it until done since I have never baked one in a small pan. Another option would be to bake as directed in a parchment lined baking pan . Lift it out once it is cooled . Cut it half and wrap and freeze half of the cake without frosting . It should be good in the freezer for a couple of months .
