If you love sweet potatoes like me these Easy Roasted Sweet Potatoes are the easiest way to cook them as a side. I know most of us only eat them during the holidays , But Why? What not give sweet potatoes love year round? Seriously , this is so simple even someone new to cooking can make these. If want something to feed a crowd and don’t want the basic casserole with marshmallows on top Give my Southern Candied Candied Sweet Potatoes a try.

Easy Roasted Sweet Potatoes in a white bowl

These easy sweet roasted potatoes are a perfect side for any meal you may cook , and they are pretty and colorful. They are perfect as a side for chicken or pork and cook pretty quickly. This is only 2 potatoes so it will serve 3-4 people. They are the perfect side with my Smoked Turkey Breast.

Pouring coconut oil over them

Preheat oven to 4oo degrees and line a cookie sheet with parchment paper. Peel the sweet potatoes and cut them in about 1/2 in cubes..as evenly as possible so they will cook evenly. Melt the coconut oil and toss it with the cut potatoes

Coating diced potatoes with cinnamon and sugar Toss the sugar and cinnamon with the cubed sweet potatoes.

Diced on a pan

Spread the potatoes evenly on the cookies sheet.Cook for 30-40 flipping the potatoes with spatula about half way through

  • 3/4 teaspoon cinnamon

Instructions
