Let’s make Strawberry Lemon Coleslaw!!
In a Large mixing bowl mix the angel hair coleslaw mix, raisins, and almonds

In a separate bowl mix the yogurt , mayo, lemon juice , salt and pepper

Pour this mixture over the cole slaw and mix well

Cover and chill at least an hour or until ready to serve

Right before ready to serve dice strawberries

Add the strawberries to the coleslaw mixture

Toss well and serve. Adding the strawberries too early will cause it to be pink , so I always wait

- 1/2 cup sliced almonds
- 1/2 cup raisins
- 2 6oz Lemon Burst Yogurt

Instructions
- In a Large mixing bowl mix the angel hair coleslaw mix, raisins, and almonds
- In a medium sized bowl mix both of the lemon yogurt, mayo, lemon juice , salt and pepper
- Pour the dressing mix over the slaw and mix well
- Cover and chill for at least an hour
- Right before serving mix in diced strawberries, Adding them right before serving keeps the berries from getting soggy and from bleeding into the mixture making it pink

Hello, I found your recipe on Just a Pinch recipe club and made it for our 4th of July celebration. It is so light and delicious. The only thing I did that I wouldn’t recommend unless you love the color purple is using purple cabbage. It turned EVERYTHING purple!!! lol. I most certainly will use green cabbage the next time so I can see the beautiful strawberries and almonds. The dressing is so yummy and a nice switch from our normal slaw. However, I love coleslaw in all it’s forms, so it’s nice to have yet another recipe to add to my coleslaw list. LOVE IT!!! Thanks again for sharing.

What is “Angel Hair Cole Slaw Mix”? I’ve never heard of it.
It’s a cabbage mix that is finely shredded and doesn’t have carrots in it . I have found it at both Kroger and Wal-mart .
