Peanut Butter Cornflake Cookies
These old fashioned Peanut Butter Cornflake cookies have 6 simple ingredients and come together quickly only using a microwave
These bring back sweet memories of my childhood, it seems like they were at every elementary school party we had. Since they are super simple to make and made with mostly pantry staples we made them often at home as well. Cornflake cookies and Rice Krispy Treats were the two things my mother loved ..Inexpensive to make and Easy. It was a win win all around.

What you will need to make these Peanut Buter Cornflakes cookies:
- Cornflakes -Plain not frosted , the store brand is fine
- Light Corn Syrup
- Granulated Sugar
- Peanut Butter – I used a smooth Peanut butter, I am scared a honey roasted would add more sweetness
- Vanilla Extracts
- Salt
- Wax Paper
- Cooking spray
- Mixing bowls
- Measuring spoons and cups
- Microwave
Let’s make some cookies
Before you start making the cookies line a cookie sheet with wax paper and spray it with a little cooking spray. Pour the cornflakes in a large mixing bow and set aside . In a microwave safe bowl mix together the corn syrup , sugar and peanut butter . Microwave it for a total of 3 minutes , stirring every so often. Once the granulated sugar is completely dissolved it is done.
Add the vanilla and salt and stir until combined.
Pour the mixture over the cornflakes and coat them evenly.
Drop the cornflake mixture by the spoonful on the wax paper. Allow it to cool and set up .
These will need to be stored in an air tight container.

Peanut Butter Cornflake Cookies
Ingredients
- 6 cups plain cornflakes
- 1 cup Light Corn syrup
- 1 cup granulated sugar
- 1 cup Creamy Peanut Butter
- 1 teaspoon vanilla extracts
- 1/2 teaspoon salt optional
Instructions
- Get wax paper ready . I usually spray a little cooking spray to prevent the cookies from sticking . Pour the cornflakes into a large bowl and set aside.
- In a glass mixing bowl mix together the corn syrup , sugar and peanut butter. Microwave for a total of 3 minutes , stopping to stir after every 30-45 seconds . When the sugar has dissolved . If the sugar isn't dissolved continue cooking for 30 seconds at a time.
- Remove the peanut butter mixture from the microwave and stir in the vanilla and salt . The salt is optional , I like the sweet and salty combination it provides.
- Pour the peanut butter mixture over the cornflakes , stir to coat all of the cornflakes.
- Working quickly scoop out the cornflakes by the spoonful and drop them onto the wax paper. Make the mounds as large as you would like the cookies. Let them cool completely and set up
I wonder what they would taste like made with dark brown sugar. Think I will try it.
I have never used brown sugar in this recipe but if that is your preference I am sure it would work just fine.
These peanut butter cornflake cookies are so sweet, simple, and delicious! Love how quickly they come together and do not require the use of the oven.
