Chewy Molasses Cookies

I have mentioned in a previous post that I give home baked goodies during the holidays as gifts. This is a cookie that I have been making for years and it has slowly evolved into what it is today. Honestly I didn’t grow up making or eating molasses cookies. Imagine the HORROR, life without the spicy goodness of molasses cookies. A co-worker introduced me to this type of cookie years ago and shared her recipe with me. Originally her recipe had a frosting but I honestly  like this cookie without frosting. I have also altered the spices over the years and added a pinch of this and that and finally the perfect molasses cookie that just oozes everything about Christmas. This recipe makes plenty of cookies for gift giving or serving a holiday crowd. Heck , leaving Santa some molasses cookies is a nice change from the old standard sugar cookie. These Chewy Molasses Cookies are thick , chewy and will not disappoint any recipient . I seriously have to hide these cookies from myself because they are addictive and I could eat a dozen in one sitting. Rolling these in Christmas colored sugars makes them festive and fun.  If you give them to small kids tell them Santa’s elves sprinkled them with Christmas Spirit.  These are not only yummy they are super easy

Start by Preheating your oven to 350 degrees

Then in a large mix your dry ingredients. Flour, salt, baking soda, ginger, cinnamon and cloves

In a separate bowl cream together shortening, eggs, brown sugar, and molasses. Then all the dry ingredients one cup at a time to the molasses mixture.

Scoop out 1 1/2 Tablespoons of dough** Using a cookie scoop keeps cookies all the same size

Roll the dough into balls

Place the sugar coated dough balls onto a parchment lined cookie sheet

Bake cookies at 350 degrees for 9-10..smaller cookies will take less time to cook so watch them

Cool for 3-5 minutes on the cookie sheet then transfer them to a cooling rack

Put them out on a plate and watch them disappear!

Chewy Molasses Cookies

These Chewy Molasses cookies are a classic cookie  sprinkled with Christmas spirit. They are perfectly spiced and taste of the holidays.

Ingredients
  

  • 4 1/2 Cups all purpose flour
  • 2 Teaspoons cinnamon
  • 2 Teaspoons ground ginger
  • 1 Teaspoon cloves
  • 2 Teaspoons baking soda
  • 1/2 Teaspoon salt
  • 1 1/4 Cups butter flavored shortening
  • 2 cups light brown sugar
  • 2 Large eggs
  • 1/2 Cup Molasses

Instructions
 

  • Preheat Oven to 350
  • In a large bowl mix together all the dry ingredients.. flour, cinnamon, ginger, clove , baking soda, and salt
  • In a separate bowl cream together the shortening, eggs, brown sugar, and molasses
  • Once the molasses mixture is blended well add the dry mixture a cup at a time to it.
  • Once the dough is blended scoop out 1 1/2 tablespoons and roll the dough into balls**using a cookie scoop keeps the cookies the same size**
  • Roll the dough balls in colored sugar careful not to mix colors if using more than one
  • Place sugar coated dough balls on a parchment lined cookie sheet
  • Bake cookies in a preheated oven for 9-11 minutes
  • Allow the cookies to cool for 4-5 minuted on the cookie sheet then transfer them to a cooling rack

I love these!!!! I don’t understand why crispy molasses cookies seem to be so popular around the holidays when chewy (in my opinion) is so much better. These cookies are my dream version, and I love the sparkly dress-up sprinkles! 🙂

These look like a recipe of my grandmas that I have misplaced. Can’t wait to try them. I have butter and shortening. Would either work in place of butter flavored?

Yummy! I had never tried a molasses cookie in my entire life and I’m almost 70 years old. I love trying new recipes and thought I would give these a try. You won’t be disappointed! The cookies are addicting. I didn’t have any colored sugar so I just rolled them in regular sugar and they turned out great. I cut the recipe in half and was still able to get a little over two dozen cookies. I plan on making some more today. Give these a try!
