Easy Coconut Macaroons
These super Easy Coconut Macaroons are slightly toasted and crisp on the outside, and soft and chewy on the inside. Dipped and drizzled brings another depth of flavor. These cookies are great any time of year .
If you love coconut you have to try these classic Easy Coconut Macaroons . These cookies are super easy to make and are a true coconut lovers dream . When I was young these cookies always made an appearance at Easter and even Christmas . We love the slightly crisp and toasted flavor of the coconut on the outside , and the chewiness on the inside. Dipping these in chocolate is a bonus and can be skipped but the coconut and chocolate combination is classic . What you will need to Make Easy Coconut Macaroons
- Shredded Sweetened Coconut- I love the Baker’s brand of coconut but you can use any brand you like
- Sweetened Condensed Milk– This provides the sweetness and the gooiness of this cookie . In this recipe I used The Borden brand but any brand will work ,
- Vanilla Extracts – I make my own vanilla extracts , you will see the bits of vanilla beans . Tap HERE for how I make mine .
- Salt -This recipe is super sweet so just a little salt gives a nice contrast in flavors .
- 2 Egg Whites – The egg whites are beaten to stiff peaks , this helps hold everything together without being heavy
- Semi Sweet Chocolate Chips – We love the semi sweet , it is a great contrast of flavor with the super sweet coconut cookie. If you love milk chocolate you can use that instead.
- Coconut oil– I use coconut oil to thin out chocoalte all the time . You can also you vegetable oil
- Baking Sheets -Really good baking sheets are a great investment and will last a long time. Tap HERE for my favorite
- Parchment Paper -Every bakes better on parchment paper and I always have it on hand . If you like silicone mats you can use this as well .
- Cookie Scoops-I bake a tin of cookies so I love using cookie scoops for a more uniform cookie . Tap Here for my Favorite , these are the most durable scoops I have found
- Hand Mixer– A good hand mixer is another good investment and something everyone that bakes needs. Tap Here for what I use

Let’s make some Easy Coconut Macaroons
In a large bowl add your coconut , condensed milk , vanilla and salt and mix together well. Those little black specs are the vanilla beans from my homemade vanilla extracts .
In a small bowl beat together the egg whites until stiff peaks form . Using a head mixer is a must for this .
Gently fold the beaten egg whites into the coconut mixture .
Scoop the coconut mixture onto a parchment lined baking sheet and bake in a 350 degree oven for 20 minutes .
Once the cookies are cooled melt your chocolate and coconut oil together . Dip the bottom of the cookies in the chocolate . Place them on parchment paper or wax paper . Then drizzle the remaining chocolate over the top of the cookies .

Easy Coconut Macaroons
Equipment
- 1 Large baking sheet
- medium cookie scoop
Ingredients
- 14 oz sweetened coconut flakes
- 14 oz sweetened condensed milk
- 1/2 teaspoon salt
- 1 teaspoon vanilla extracts
- 2 egg whites beaten to stiff peaks
- 1 cup semi sweet chocolate chips
- 1 Tablespoon coconut oil Vegetable oil can be subbed
Instructions
- In a large mixing bowl combine the coconut flakes , sweetened condensed milk , salt and vanilla .
- Mix until combined
- In a small mixing bowl beat egg whites until stiff peaks form
- Fold the egg whites in with the coconut mixture. Mix until combined
- With a medium sized cookie scoop drop mounds of the coconut mixture onto a parchment lined baking sheet . I got 15 large cookies .Bake in a preheated 350 degree oven for 20 minutes
- Let the macaroons cool for 10 minutes and then transfer them to a cooling rack
- Once macaroons are cooled heat the chocolate and coconut oil up in a small bowl. I heated it in the microwave in 30 second intervals , stirring in between .
- Dip the bottom into the chocolate and then place them on parchment paper or wax paper .
- Drizzle the remaining chocolate over the top of the macaroons . Allow the chocolate to set up. Placing them in the freezer for 10 minutes speeds up the process .

These can be stored at room temperature in an air tight container for up 7 days
Yes you can. Once these are cooled you can put these in an air tight container using wax paper to separate the layers for up to 3 months .
Yes nothing in this contains gluten , so these are safe to have if you can’t have gluten. As always I suggest you check if you use different brands than I have used .
Yes you can use a baking mat instead of parchment paper. Just make sure you use something , these are very sticky .
These macaroons bring back so many memories for me. My mom wasn’t a baker so she avoided anything that needed to rise lol. Macaroons were the only cookie she would bake and have them turn out. They still are a favourite to this day.
