Corn Dip

This creamy corn dip has the perfect balance of flavors. The naturally sweet corn is a nice contrast from the spices and the fresh veggies provide a nice texture and flavor. This is the perfect party dip or a great addition to your game day menu.

. I don’t know about your family but on game dame we need snacks …lots of snacks lol. We love just about anything that can be served with chips like Salsa or a Tex Mex dip . The thing I love about this corn dip is it is so easy , literally ready to eat in less than 10 minutes.

Let’s Make Corn Dip!

Items you will need to make this delicious dip

  • 2 cans of corn
  • small can of diced chilis
  • Mayo
  • sour cream
  • Packet of taco seasoning
  • Bell pepper
  • green onions
  • shredded cheese
  • optional -diced jalapenos
  • Chef’s Knife-I use this knife for almost all of my dicing
  • rubber spatula
  • mixing bowl
  • Tortilla Chips or Frito Scoops to serve it with

Start by draining the corn and chilis and set aside.

In a large mixing bowl mix the mayo , sour cream and taco seasoning. Mix well and set aside.

Mix in the diced bell pepper , green onions and cheese.

Fold in the corn and green chilis .

If you like a little extra kick add diced jalapenos .

Serve immediately with tortilla chips or frito scoops.

Ingredients
  

  • 2 cans corn
  • 1 4oz can diced green chilis
  • 1/2 cup diced bell pepper I like to use red
  • 1/2 cup diced green onions
  • 1 packet taco seasoning
  • 1 cup Mayo
  • 1 cup sour cream
  • 1 1/2 cup shredded cheddar cheese or cheese of your choice
  • 2-3 Tablespoons diced jalapenos from a jar optional -only if you like a kick
  • Tortilla Chips or Frito Scoops to serve it with

Instructions
 

  • Drain the corn and chilis well and set aside
  • In a large mixing bowl mix the sour cream , mayo and taco seasoning
  • Add diced bell pepper. diced green onions and cheese
  • Add Corn and chilis and mix well
  • If you like a little kick add some diced jalapenos
  • Serve immediately or cover and chill

Notes

This dip is great served immediately but even better after it chills for a few hours.
If you want an extra kick you can add a drained can of Rotel tomatoes .
