This is a great basic Pumpkin Bread that is tender and loaded with warm pumpkin flavor and spices. I adore quick breads, they come together easily and are very versatile. They can be served as a light dessert , breakfast with a cup of coffee , or an afternoon snack with a cup of tea. So this a great basic pumpkin bread with no frills and no fancy equipment needed . Just basic stuff most of us have on hand .. a mixing bowl , wire whisk and rubber spatula. If you are like me I mostly like just plain bread but sometimes I like a little something extra. I gave a list of extra optional add ins ..I like to add dried cranberries and pecans on occasion.
Things you will need to make Pumpkin Bread:

Ingredients
- Canned Pumpkin
- Vegetable Oil
- all purpose flour
- granulated sugar
- an egg
- Pumpkin spice
- cinnamon
- salt
- baking powder
- baking soda
Optional Add ins:
Add 1-1 1/2 cups of these optional ingredients to change things up a bit .
- Pecans
- walnuts
- golden raisins
- dried cranberries
- Chocolate chips
- white chocolate chips
Let’s Make Pumpkin Bread!
Gather your simple ingredients ! Preheat oven to 350 degrees and spray a loaf pan with Baker’s Joy or something similar.
In a mixing bowl beat with a wire whisk the sugar , an egg and oil until smooth
Add canned pumpkin and beat until smooth
Add the flour , baking soda , baking powder , salt , pumpkin spice and cinnamon
Stir until smooth using a whisk and rubber spatula. At this point you can add optional add ins
Pour into the prepared loaf pan and bake in the preheated oven for 55-60 minutes.
Let Cool 10 minutes and remove from pan
Let cool before slicing and Enjoy. These breads freeze well once wrapped in plastic and in a ZipLock bag it will freeze for about two months. These make great holiday favors and hostess gifts as well

Ingredients
- 1 Egg
- 1 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup canned pumpkin puree
- 1 1/2 cups all purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon of pumpkin spice
- 1/2 teaspoon cinnamon
- *See notes for optional add ins
Instructions
- Preheat oven to 350 degrees and spray a loaf pan with Baker's Joy or something similar

- Add the flour , baking soda , baking powder , salt , pumpkin spice and cinnamon
- Stir until smooth using a whisk and rubber spatula
- At this point you can add optional add ins
- Pour into the prepared loaf pan
- Bake in the preheated oven for 55-60 minutes
- Let Cool 10 minutes and remove from pan
- Allow to cool on before slicing
