I don’t know about all of you but I consider the best part of the wedding reception is the cake. My favorite is a traditional white cake that has a slight almond flavor with strawberry filling and buttercream frosting. Oh wait , I am describing my wedding cake from 1999 LOL. The other day I made some Whipped Strawberry Cream Cheese Butter and I knew I needed to make some waffles . I also happened to make my wedding cake cupcakes for a tournament and a light bulb went off. I knew all the flavors in the cupcake would be fabulous in a waffle and I was right.
I basically converted my cupcake recipe into waffles and it worked beautifully. These waffles are light and airy but they are slightly sweet also. I highly recommend pairing this with fresh whipped cream and whipped strawberry cream cheese butter. All the flavors combined are simply scrumptious. If you are more of a traditional butter and syrup kind of person this is perfectly fine also.
To make the waffles this is fairly easy since we start with a cake mix. Whisk together the cake mix , baking powder and flour.
Add the water , milk and oil blending as you go .
In a separate bowl beat the egg whites until peaks form
Gently fold the egg whites into the batter until everything is incorporated
Preheat waffle iron and spray with cooking spray
Pour batter into waffle iron careful not to overfill ..don’t ask how I know this lol
Cook until golden brown
For the almond whipped from combine heavy whipping cream , powdered sugar and almond extract in a mixing bowl. Beat with a wire whisk attachment until it forms peaks
