Easy Pumpkin Cookies

When fall baking season kicks off, these easy pumpkin cookies are a must-have for any pumpkin spice lover. While they’re delicious on their own, the optional maple buttercream frosting takes them to the next level, adding a rich, sweet touch that perfectly complements the spiced pumpkin flavor. - 15.25oz Duncan Hines Spice Cake Mix
- 15oz pure pumpkin
- Pumpkin Pie Spice
- Butter
- powdered sugar
- maple flavoring
- milk
- salt
- Mixing bowl

Let’s Make Easy pumpkin cookies
Preheat your oven to 350 degrees. Mix together the cake mix and pumpkin Pie Spice
Add the whole can of canned pumpkin .
Mix until a dough forms .
Scoop out cookie dough and place on a parchment lined baking sheet about an inch apart
Bake in the preheated oven for 13-15 minutes . Let the cookies cool for about 5 minutes and transfer them to a cooling rack . The cookies are good at this point so the Maple Buttercream frosting is optional
To make the frosting beat the butter for about 2 minutes add half of the powdered sugar and maple flavoring . Beat until smooth , add the remaining powdered sugar . Thin out to the consistency you like with milk.
Add a large dallop of frosting to each cookie

- 1 15.25oz Duncan Hines Spice cake mix
- 1 teaspoon Pumpkin Pie Spice
- 15 oz canned pure pumpkin
Maple Buttercream frosting -optional
- 1/2 cup Butter
- 2 cups cups powdered sugar Sifted
- 1 teaspoon maple flavoring
- 1/4 tsp salt
- 1-2 Tablespoons milk
Instructions
- Preheat your oven to 350 degrees. Mix together the cake mix and pumpkin Pie Spice
- Add the entire can of pumpkin
- Mix until the dough forms , it will be sticky
- Scoop out cookie dough and place on a parchment lined baking sheet about an inch apart
- Bake in the preheated oven for 13-15 minutes . Let the cookies cool for about 5 minutes and transfer them to a cooling rack . The cookies are good at this point so the Maple Buttercream frosting is optional

- Add a large dallop of frosting to each cookie . If frosted these cookies are good for about 2 days , they will get soggy after that .

You can freeze these cookies without the frosting . They are good the freezer in a sealed container for up to 3 weeks
The cookies themselves are vegan but the frosting is not .
